In the last few weeks I have gotten to do a few of my dream jobs.  Not only does that help get my mind of all sorts of things, but I have gotten to dig down into my deep roots of what I like about me….

First and foremost job, bookkeeping…. no this was never my dream job, but it has been something I have gotten more responsibility in thus making things  a bit more interesting.

Second Job, working at a separate establishment greeting guests, making drinks etc etc which is wonderful.  I get to go from behind my desk and actually make people contact.  Something I love doing and am good at.  I have always been a people person so this job suits me well.  I don’t get to do it as often as I would like, but I have gotten to accomplish more and more.

Third Job, doing income taxes for people.  Also, not my dream job but it brings in a bit extra cash to cover some of the bills that cropped up last year for legal issues etc.  I know it will end soon as Tax Deadline is April 17th this year, but for the time being, it is fun thus far, because mostly I have been able to give people good news of REFUND!!!!! 

Last but not least….. my most favorite indeed is I have been asked to develop a few recipes for trial runs at the Brewery and at the Restaurant.  Well this has brought out my love of cooking that has semi-disappeared since I got my divorce.    Today I created an amazingly simple Smoked Salmon Spread that will be put on the Brewery Menu for happy hour.  I got so many praises from not only the owner, but to include the restaurant manager and the head chef.  It was devoured within minutes of preparation.    This is two of my recipes now on that menu and one recipe at the OES restaurant.  I am hoping that I will get to do more research/developement for the restaurants.  It doesn’t pay any extra, but it fulfills my dream of someday owning my own restaurant, without all the stress.  :)   I am lucky this way.

So amidst juggling all the things on my plate to include health, financial, family and mom I have been lucky to do some fun things as well.  Helps keep the mind occupied to not go to places it shouldn’t go.

Someday possibly I will catch my own salmon and learn how to prepare to make the recipe below:

    1/4 lb smoked salmon

    1/4 cup sour cream

    4 ounces cream cheese

     juice of one half lemon

     salt  and pepper

    crushed red pepper

Blend all  the ingredients in a food processor silky smooth and then garnish with capers, shallots and a lemon wedge.  Serve with Crustini’s crackers or pita chips.
